Oatmeal Ice Cream Sandwiches

  1. In a bowl, cream shortening and sugars.
  2. Beat in eggs and vanilla.
  3. Combine dry ingredients; gradually add to the creamed mixture.
  4. Stir in the chips and pecans.
  5. Drop by heaping teaspoonfuls 3 inches apart onto lightly greased baking sheets.
  6. Bake at 375 for 10-12 minutes or until golden brown.
  7. Remove to wire racks to cool.
  8. To make ice cream sandwiches, place a scoop of ice cream on the bottom of half of the cookies.
  9. Top with remaining cookies; wrap in plastic wrap.
  10. Place on a baking sheet; freeze.
  11. Yield: about 2 dozen sandwiches.
