Quick Chicken Fajitas

  1. Heat half of the coconut oil in a large skillet over medium-high heat.
  2. Saute peppers and onions until crisp-tender.
  3. Remove and keep warm.
  4. Add remaining coconut oil, chicken strips, seasonings and lemon juice.
  5. Mix well and cook over medium-high heat for 7-9 minutes or until cooked through.
  6. Return pepper mixture to skillet and let the mixture cook together for a few minutes.
  7. Remove from heat and serve over rice or with warm tortillas.
