Banana Muffins
- 2 cups bran flakes
- 1 14 cups milk
- 1 cup whole wheat flour
- 12 teaspoon salt
- 1 tablespoon baking powder
- 4 tablespoons butter
- 14 cup superfine sugar
- 1 egg
- 2 bananas, mashed
- 12 cup raisins
- Soak the bran flakes in the milk for 10 minutes.
- Sift together the flour, salt, and baking powder.
- Cream the butter and sugar, then beat in the egg.
- Stir in alternate spoonfuls of the soaked bran flakes and the flour mixture.
- Gently fold in the mashed bananas and the raisins.
- Line a muffin tin with fluted paper cups and half fill each with the mixture.
- Bake in the 350 degree F preheated oven for 30 minutes.
