Dessert PecansFor Handy Snacks Following a Meal.

  1. Bring the water to a boil in a 1-quart saucepan.
  2. Add the pecans, boil for 1 minute, then drain well.
  3. Transfer the pecans to a bowl, and toss with the artificial sweetener to coat thoroughly.
  4. Heat the oil in a large skillet over medium heat.
  5. Add the pecans and saute, stirring constantly or shaking the pan, until the nuts have turned dark brown, 4 to 5 minutes.
  6. Using a slotted spoon, remove the nuts to wax paper or paper towels to drain.
  7. Sprinkle with salt, and eat slightly warm or at room temperature.
