Very Healthy Cookies (Good Too) Recipe
- 1/2 c. smooth peanut butter
- 1/3 c. sugar
- 1/3 c. packed brown sugar
- 2 tbsp. butter, room temp.
- 1/2 teaspoon vanilla
- 1 egg
- 1 c. rolled oats
- 1/3 c. flour
- 1/2 c. wheat flour
- 1 1/2 teaspoon baking soda
- 1 apple, shredded
- 1 carrot, pared and shredded
- 1/2 c. raisins
- 1/2 c. minced pecans
- 1.
- Cream peanut butter, sugars, butter and vanilla.
- Beat in egg till blended.
- 2.
- Blend in oats, flours and baking soda till thoroughly combined.
- 3.
- Stir in apple, carrots, raisins and nuts till blended.
- Roll into 1 inch balls; place on greased cookie sheet.
- Flatten with fork.
- 4.
- Bake 400 degrees 8 to 12 min or possibly lightly brown.
