Spicy Black Bean Burgers with Lemon Mayo Sauce

  1. For the burgers:
  2. In a large bowl, mix together the beans, corn, breadcrumbs, eggs, seasonings and jalapeno peppers until well combined.
  3. Using your hands, form the burger mixture into patties, each about a 1/4 cup worth of mixture.
  4. Feel free to make the burgers smaller or larger, depending on your preference of burger size!
  5. Add a few tablespoons of olive oil to a skillet or frying pan over medium heat and cook the burgers until heated through and lightly browned on each side.
  6. Cook them on the grill over a medium fire for a few minutes longer on each side, if desired.
  7. Let the burgers cool slightly, put them on buns, spread with the Lemon Mayo Sauce (recipe follows) and enjoy!
  8. For the sauce:
  9. In a small bowl, whisk the sour cream, mayo, mustard, lemon juice, salt and pepper until combined.
  10. Serve on burgers, and enjoy!
