Spicy Black Bean Burgers with Lemon Mayo Sauce
- 30 ounces, weight Black Beans, Drained
- 15 ounces, weight Can Of Corn, Drained
- 1 cup Breadcrumbs
- 2 whole Eggs, Lightly Beaten
- 1/2 teaspoons Salt
- 1/2 teaspoons Ground Pepper
- 1/2 teaspoons Cumin
- 1/2 teaspoons Chili Powder
- 1 pinch Garlic Powder
- 3 Tablespoons Jalapeno Peppers, Chopped
- 4 Tablespoons Olive Oil, For Frying
- 6 whole Hamburger Buns (up To 8 Depending On The Size Of The Burgers You Make)
- 1/2 cups Light Sour Cream
- 1/2 cups Light Mayonnaise
- 1 Tablespoon Mustard
- 1/2 whole Lemon, Juiced
- 1 pinch Salt
- 1 pinch Pepper
- For the burgers:
- In a large bowl, mix together the beans, corn, breadcrumbs, eggs, seasonings and jalapeno peppers until well combined.
- Using your hands, form the burger mixture into patties, each about a 1/4 cup worth of mixture.
- Feel free to make the burgers smaller or larger, depending on your preference of burger size!
- Add a few tablespoons of olive oil to a skillet or frying pan over medium heat and cook the burgers until heated through and lightly browned on each side.
- Cook them on the grill over a medium fire for a few minutes longer on each side, if desired.
- Let the burgers cool slightly, put them on buns, spread with the Lemon Mayo Sauce (recipe follows) and enjoy!
- For the sauce:
- In a small bowl, whisk the sour cream, mayo, mustard, lemon juice, salt and pepper until combined.
- Serve on burgers, and enjoy!
