Ham and Veggie Hash

  1. Cut potatoes into 1/2-inch cubes.
  2. Trim ends from green beans; cut into 1-inch pieces.
  3. In 3-quart saucepan over high heat, heat potatoes, green beans, and enough water to cover to boiling.
  4. Reduce heat to low; cover and simmer 2 minutes or until vegetables are almost tender.
  5. Drain.
  6. Meanwhile, dice ham.
  7. In nonstick 12-inch skillet over medium-high heat, cook ham until browned; remove to plate.
  8. Chop pepper and onion.
  9. In same skillet in hot salad oil, cook pepper and onion until lightly browned.
  10. Add potatoes, green beans, and salt and cook, stirring occasionally, until vegetables are tender and browned.
  11. Sprinkle with ham and parsley.
