Thai Marinated Fish

  1. Arrange the fish in a single layer in a glass dish.
  2. Combine the dressing, coriander, olive oil, chilli and pepper, and pour one cup of the mixture over the fish.
  3. Cover, refrigerate, and leave to marinate for 2 hours.
  4. Place the fish on a pre-heated BBQ hot plate, and cover with foil.
  5. Cook for 6-8 minutes, or until fish flakes easily with a fork.
  6. Add the vegetables, BBQ or grill until tender.
  7. Combine the chargrilled vegetables with the rocket and red cabbage to form a salad.
  8. Drizzle remaining dressing over the salad and then top with the cooked fish.
  9. Garnish with extra coriander, if desired.
