Cheesy Potato Bacon Ale Soup #5FIX
- 8 slices thick cut hickory smoked bacon
- 3 cups Simply Potatoes Diced Potatoes with Onion
- 2 (10 3/4 ounce) cans Fiesta nacho cheese soup
- 6 soup cans water
- 1 (12 ounce) bottle ale, room temperature
- Heat a large pot, chop bacon into small pieces, cook until crisp.
- Place on paper towel lined plate and set aside.
- Leave 2-3 tablespoons of the bacon grease in the pot, add the potatoes, cook until the bacon grease is absorbed and the potatoes are heated thru.
- Stir in the 2 cans of cheese and 4 cans of water, stir and mix well.
- Simmer over medium/low heat covered for 10 minutes, stir occasionally.
- Remove from heat and with an immersion blender, blend the potatoes thoroughly into the soup.
- Add the ale, simmer 10 more minutes uncovered, if the soup gets too thick, thin it with the remaining water.
- Serve soup hot with bacon on top.
