4 Bean Salad
- 13 cup red wine vinegar
- 4 tablespoons balsamic vinegar
- 14 cup extra virgin olive oil
- 12 teaspoon black pepper
- 14 cup scallion, sliced
- 34 cup red onion, finely diced
- 14 cup peppadew peppers (sweet red peppers) or 14 cup roasted red pepper, finely diced
- 12 teaspoon sea salt
- 3 tablespoons honey
- 1 (12 ounce) can white beans, drained
- 1 (12 ounce) can chickpeas, garbanzo beans, drained
- 1 (12 ounce) can pinto beans, drained
- 1 (12 ounce) can black beans, drained
- Combine all ingredients, mix well, cover and refrigerate for 1 hour.
- Mix well and serve.
