Asian Noodle Salad With Toasted Sesame Dressing
- 1 (8 ounce) package soba noodles
- 14 cup chopped cilantro leaf
- 14 cup toasted sesame seeds
- 1 (14 ounce) package tofu, firm
- 2 tablespoons toasted sesame oil
- 3 tablespoons tamari
- 3 tablespoons balsamic vinegar
- 1 tablespoon hot pepper oil (skip this for the tots)
- chopped red cabbage
- finely slice radish
- sliced scallion
- Make the dressing in a small bowl by combining all ingredients and whisking together.
- Cube the tofu and marinade it in the dressing.
- Cook the soba noodles according to package instructions.
- Place drained noodles in large bowl and add dressing with tofu, cilantro, and sesame seeds.
- Add any additional vegetables and toss gently and thoroughly.
