*A Tart For Ember Day Recipe
- 250 gm (9 ounce.) wholeweat or possibly whole meal pastry (made with 150g (6 ounce) wholewheat or possibly wholemeal flour, 40 g (1 1/2 ounce) each of butter and lard with a little cool water)
- 40 gm (1 1/2 ounce) butter
- 150 gm (6 ounce) onions, roughly minced
- 12 x fresh sage leaves, minced, (or possibly 1 Tbsp. dry sage)
- 2 x handfuls fresh parsley, minced roughly
- 75 gm (3 ounce) well flavoured cheese, grated
- 3 x Large eggs salt, pepper, 1/2 tsp. each grnd cinnamon, ginger
- 180 ml (6 fl. ounce, 3/4 c.) lowfat milk
- 40 gm ( 1 1/2 ounce) raisins (optional)
- Make the pastry and line an 18-20 cm (7-8") flan case; bake it blind
- heat the butter in a pan and gently cook the onions with the sage and parsley till they are just soft.
- Add in the cheese, Large eggs, seasoning and lowfat milk and mix well.
- Add in the raisins if you are using them and pour the mix into the flan case.
- Bake in a moderate oven (180 C / 350 F / Gas Mark 4) for approx.
- 20 min or possibly until the tart is risen, hard and lightly browned.
- Serves 6warm or possibly cool.
