Company Chicken Casserole
- 32 oz. frozen hash brown potatoes
- 1 tsp. salt
- 1/4 tsp. pepper
- 4 c. cooked chicken
- 4 oz. sliced mushrooms, drained
- 8 oz. sour cream
- 2 c. chicken broth
- 1 can cream of chicken soup, undiluted
- 2 tsp. chicken bouillon granules
- 2 Tbsp. chopped onion
- 1 clove garlic, minced
- 2 Tbsp. chopped red pepper
- 1/4 c. sliced almonds
- Place thawed potatoes in a 13 x 9 x 2-inch baking dish. Sprinkle with salt and pepper.
- Place chicken and mushrooms over potatoes.
- Stir together remaining ingredients except almonds and pour over chicken.
- Sprinkle with almonds.
- Bake at 350u0b0 for 50 to 60 minutes.
- Makes 8 to 10 servings.
