Sparkling Dessert

  1. STIR boiling water into jelly powder in large bowl at least 2 minutes until completely dissolved.
  2. Stir in cold club soda.
  3. Chill about 1 1/2 hours or until slightly thickened.
  4. MEASURE 1 cup (250 mL) thickened jelly into medium bowl; set aside.
  5. Stir strawberries into remaining jelly.
  6. Spoon into champagne glasses or dessert dishes.
  7. BEAT reserved jelly with electric mixer on high speed until fluffy and about double in volume.
  8. Spoon over top of jelly in glasses.
  9. CHILL 3 hours or until firm.
