Chicken Chow Mein Recipe

  1. Bone and cut up chicken in thin bite sized slices.
  2. Marinate chicken about 1/2 hour with 2 cloves crushed garlic, 3 Tbsp.
  3. soy sauce, 2 Tbsp.
  4. sherry, and 1/2 tsp.
  5. salt.
  6. In boiling water, drop noodles and cook about 4 min.
  7. Drain well and put 3 Tbsp.
  8. heated oil in a large skillet.
  9. When skillet is warm, brown both sides of noodles till golden brown color.
  10. Place in a pan and keep hot in low oven.
  11. Cut remaining ingredients in uniform thin strips.
  12. When noodles are ready, heat 2 Tbsp.
  13. oil in a large skillet and stir fry chicken till almost done.
  14. Add in all vegetables and mix well together.
  15. Add in 1 c. soup stock or possibly water, and cover till it comes to a boil.
  16. Cook vegetables just to a crisp.
  17. Season to taste.
  18. Thicken with cornstarch mix (2 Tbsp.
  19. cornstarch and 4 Tbsp.
  20. water).
  21. Pour over noodles.
  22. Garnish with minced green onions.
