Harvest Pumpkin Pie
- 34 cup brown sugar, lightly packed
- 12 teaspoon salt
- 1 teaspoon cinnamon
- 14 teaspoon nutmeg
- 14 teaspoon ginger
- 2 eggs, lightly beaten
- 1 12 cups pumpkin (York)
- 1 12 cups light cream
- 1 (9 inch) deep dish pie shells
- Mix together brown sugar and seasonings.
- Stir in remaining filling ingredients and beat until smooth.
- Pour into shell.
- Bake at 450F for 10 minutes.
- Lower temperature to 350F and bake for a further 40-45 minutes.
