Oatmeal Chocolate Raisin Cookies
- 1 14 cups all-purpose flour
- 1 teaspoon baking soda
- 34 teaspoon ground cinnamon
- 12 teaspoon salt
- 34 cup unsalted butter, softened (1 1/2 stick)
- 23 cup granulated sugar
- 23 cup packed light brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 14 cups old fashioned oats
- 1 cup chocolate-covered raisins, coarsely chopped (Raisinets recommended)
- Heat oven to 375.
- Whisk together flour, baking soda, cinnamon and salt.
- Set aside.
- Beat butter and sugars until smooth.
- Beat in eggs and vanilla.
- On low speed, beat in flour mixture until blended.
- Stir in oats and Raisinets.
- Drop by well-rounded tablespoonfuls onto nonstick ungreased baking sheets, about 2-inches apart.
- Bake at 375 for about 11-13 minutes or until lightly browned around the edges.
- Cool on the baking sheets for 2 minutes.
- Remove cookies to a wire rack; cool completely.
