Apple Coffee Cake
- 2 baking apple - sliced
- 1 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup sugar
- 1 tsp ground cinnamon
- 1 tsp vanilla
- 5 1/2 tbsp unsalted butter
- 1 egg
- 2/3 whole milk
- Preheat oven to 375A F.
- Whisk vigorously flour, baking powder, and salt
- In separate bowl mix 1/4 cup of sugar with cinnamon
- With an electric mixer, beat butter with egg, 1/4 cup sugar, and vanilla until homogeneous, may be slightly lumpy
- Add flour mixture in 3 additions alternating with milk
- Pour half of batter in greased baking dish.
- Lay cut apple slices on batter.
- Sprinkle cinnamon sugar over apples, reserving about 1-2 tbsps to cover top.
- Spread remaining batter over apples.
- Sprinkle remaining cinnamon sugar on top.
- Bake for 30 minutes or until golden brown and apples begin to bubble at edges
