La Frittata/ Easy Omelet

  1. Slice and chop onion and garlic.
  2. Add to pan with 3 Tbs of olive oil.
  3. (or more to taste)
  4. Once fragrant, add cooked vegetables.
  5. Stir to incorporate.
  6. Whisk the eggs.
  7. Add the cheese, chopped parsley and salt and pepper, if desired.
  8. Add pasta and stir.
  9. Add egg mixture and stir to spread evenly in pan.
  10. Cover, and allow to cook for 5 to 10 minutes on medium heat until the sides of the omelet release easily.
  11. Take a plate, and flip the omelet.
  12. Slide back into pan and cook an additional 3 to 5 minutes.
  13. Remove from pan and garnish with parsley.
  14. Can be served hot or cold.
