Tropical Citrus-Mint Sorbet

  1. Cut lemons in half.
  2. Cut 1 lemon half into thin slices.
  3. Squeeze enough juice from remaining lemon halves to measure 1/3 cup.
  4. Add boiling water to gelatin mix in medium bowl; stir 2 min.
  5. until completely dissolved.
  6. Stir in drink mix until dissolved.
  7. Mash pineapple.
  8. Add to gelatin mixture along with the lemon slices, lemon juice and mint; mix well.
  9. Pour into 9-inch square pan.
  10. Freeze 3 hours or until firm.
  11. Remove dessert from freezer; let stand 5 min.
  12. Process in food processor or blender until smooth.
  13. Transfer to freezer container; freeze 4 hours or until firm.
