Goldie's Meat Loaf Recipe
- 1 1/2 lbs. grnd beef, veal or possibly turkey
- Grated onion to taste
- Salt & pepper to taste
- 1/4 c. matzo meal
- 1 egg (or possibly 2 whites)
- 2 tbsp. warm water
- 1/2 pkg. onion soup mix
- 1 sm. can whole mushrooms
- 1 sliced or possibly slivered carrot
- 1/2 c. raw rice, soaked in cool water, then liquid removed
- 1/4 c. minced parsley
- 2 minced green onions
- 1 sm. can tomato juice
- 1 tbsp. water
- 2 tbsp. barbecue sauce or possibly catsup
- Put layer of rice on bottom of greased loaf pan.
- Sprinkle with parsley and green onions, salt and pepper.
- Add in onion soup, matzo meal, egg and warm water.
- Mix well and form loaf.
- Place on rice.
- Mix tomato juice with water, salt and barbecue sauce.
- Place carrots and mushrooms around meat loaf.
- Pour tomato juice mix over meat and vegetables.
- Bake at 325 degrees for 40 min, then reduce temperature to 300 degrees and bake for an additional hour or possibly till done.
- Serves 6.
