Chicago-Style Steak with Blue Cheese Butter

  1. Preheat barbecue to medium-high heat.
  2. Mix butter, cheese and onion until well blended; cover.
  3. Refrigerate until ready to use.
  4. Grill steaks 10 to 12 min.
  5. for medium-rare doneness (140F) or slightly longer for medium doneness (160F), turning occasionally and brushing with barbecue sauce.
  6. Remove and discard bones from steaks; carve meat into slices.
  7. Serve topped with butter mixture.
