Lemon blueberry loaf

  1. In a large bowl, beat the butter, sugar, lemon juice and eggs.
  2. Combine the flour, baking powder and salt; stir into egg mixture alternately with milk, beating well after each addition.
  3. Fold in the blueberries, lemon peel.
  4. Transfer to a greased 8-in.
  5. x 4-in.
  6. loaf pan.
  7. Bake at 350 for 60-70 minutes or until a toothpick inserted near the center comes out clean.
  8. Cool for 10 minutes before removing from pan to a wire rack.
  9. Warm up the whipping cream until bubble appears n pour it over white chocolate chips in a bowl.
  10. Let it sit for about 10 mins.
  11. Stir n mix well.
  12. Pour over cooled cake n decorate with fresh blueberries.
  13. Serve.
