Autumn Apple Salad With Pomegranate

  1. Heat oil in an 8″ inch skillet over medium heat.
  2. Add shallot and saute until soft and clear or for approx 4 minutes.
  3. Remove from heat and add vinegar and honey.
  4. Taste and season with salt and freshly ground pepper.
  5. Toss lettuce and apples.
  6. Drizzle 1/2 of the dressing and toss again.
  7. Divide salad among plates, top with goat cheese, pomegranate seeds, and remainder of dressing.
  8. Enjoy!
