Apple Cider Chicken Recipe
- 4 Tbsp. Unsalted butter
- 1 lrg Thinly sliced red onion
- 1 tsp Minced fresh thyme leaves
- 1 x Granny smith apple, peeled, Cored, sliced
- 3/4 c. Apple cider
- 2 whl chicken breasts
- 1/4 c. Flour
- 1/4 c. 1/2 & 1/2
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 Tbsp. Chopped parsley
- In 12" nonstick skillet, heat 3 Tbls.
- butter.
- Add in onion & thyme; over medium-low heat, saute/fry 12-15 min, till onion is soft & begins to brown.
- Stir in apple & cider; over med heat, saute/fry 8 min, till apple is soft.
- Remove from skillet; keep hot.
- On waxed paper, coat chicken with flour.
- In skillet, heat remaining 1 Tbls.
- butter; over med heat, cook chicken 4 to 5 min each side.
- Remove to platter; keep hot.
- To pan, add in apple mix, half & half, salt & pepper; when warm, spoon over chicken.
- Sprinkle with parsley.
