Smoky Black -Eyed Pea Soup

  1. Combine stock, black-eyed peas, ham and onion in a large pot.
  2. Bring to a boil.
  3. Reduce heat to low and simmer, covered, for 45 minutes.
  4. Add tomatoes, celery and seasonings.
  5. Simmer for 30 more minutes, adding bell pepper during the last minutes of cooking.
