Vegetarian Southwestern Vegetable Bake
- 2 (10 ounce) packagesfrozen Mexican-style corn (with roasted red peppers)
- 1 (14 1/2 ounce) can tomatoes, chili-style undrained
- 1 (15 1/2 ounce) can white hominy, drained
- 1 (15 ounce) can black beans, rinsed and drained
- 12 cup shredded reduced-fat cheddar cheese or 12 cup monterey jack pepper cheese
- Mix together all the ingredients in a 2 quart baking dish.
- Bake, covered, at 350 degrees for 25 minutes or until bubbly.
- Uncover, add cheese, and bake until cheese is bubbling.
