Chicken Fried Rice
- 1 tsp vegetable oil
- 1 small onion, thinly sliced
- 1 clove garlic, chopped
- 1/4 cup frozen peas
- 1 cup cold cooked brown rice
- 1 cooked, skinless chicken breast, chopped
- 1 tbsp soy sauce
- 1 tbsp water
- 1 egg white
- 1 tsp toasted sesame oil
- Heat the vegetable oil in a skillet
- Add the onion and cook for 2-3 minutes
- Add the garlic and cook 1 minute longer
- Add the rice and stir fry a little
- Add the chicken and the peas, followed by the soy sauce and water
- Stir fry a couple of minutes until hot
- Make a space in the middle of the rice mixture, and crack the egg white into the space
- Allow the egg white to cook a little then mix it into the rice until thoroughly cooked
- Dress with the sesame oil and serve immediately
