Vickys Vegan Scotch Pancakes
- 120 grams plain flour
- 1/4 tsp baking soda / bicarb
- 1/2 tsp cream of tartar
- 60 grams sugar
- 180 ml milk, any kind - rice, almond, coconut etc
- 1 tsp potato or corn starch mixed with 2 tbsp of the milk already listed
- 1 tsp vanilla extract
- Mix together all dry ingredients, then add the wet ingredients gradually and stir in until the consistency is like that of smooth thick cream
- Heat a lightly oiled frying pan and spoon the batter in ladlefulls
- Cook until bubbles form then start to pop then flip over and lightly brown the other side
- You can change the vanilla for any other flavouring you like such as strawberry, add some cocoa powder and some orange essence for chocolate orange, add blueberries or chocolate chips to the batter, the possibilities are endless!
