Chocolate Cake With Chocolate Glaze
- 34 cup cocoa
- 1 34 cups unsifted flour
- 2 cups sugar
- 1 12 teaspoons baking soda
- 1 12 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon instant coffee
- 2 eggs
- 1 cup milk
- 12 cup vegetable oil
- 1 cup boiling water
- 1 cup sugar
- 13 cup baking cocoa
- 3 tablespoons cornstarch
- 1 cup water
- 3 tablespoons butter, cubed
- 1 teaspoon vanilla extract
- For the cake: Preheat oven to 350 and spray a 9x13 inch cake pan with nonstick spray like Pam.
- Mix all ingredients except the boiling water together in a large bowl at medium speed for about 2 minutes or until well mixed, then add the boiling water and stir just until well blended.
- Pour into cake pan and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Let cool completely, then pour on the glaze.
- For the glaze: In a saucepan, combine the sugar, cocoa, cornstarch, and water until smooth.
- Bring to a boil over medium heat, stirring constantly.
- Cook and stir for 1-2 minutes or until thickened.
- Remove from heat and stir in the butter and vanilla until the glaze is smooth.
- Cool to lukewarm.
- Stir, then spread over top of the cake.
- Let stand until set.
- Refrigerate leftovers.
