Tomato & Herb Tostada
- 4 corn tortillas (6 inch)
- 1/2 cup instant white rice, uncooked
- 1 can (15 oz.) black beans, rinsed
- 1 tsp. ground cumin
- 1/4 tsp. each garlic powder and ground red pepper (cayenne)
- 1 cup KRAFT Authentic Mexican Style Finely Shredded Cheeses, divided
- 1 tomato, seeded, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1/4 cup chopped cilantro
- Heat oven to 350F.
- Spray both sides of tortillas with cooking spray; place in single layer on baking sheet.
- Bake 6 to 7 min.
- or until crisp and lightly browned.
- Meanwhile, cook rice in medium saucepan as directed on package.
- Add beans and seasonings to rice; mix lightly.
- Spoon onto tortillas.
- Reserve 2 Tbsp.
- cheese; sprinkle remaining cheese over tostadas.
- Bake 5 min.
- or until cheese is melted; top with tomatoes, cilantro and reserved cheese.
