Boiled Eels Recipe

  1. Choose small eels for boiling.
  2. Put them in a stewpan with the parsley, and just sufficient water to cover them.
  3. Simmer till tender.
  4. Take them out, pour a little parsley and butter over them, and serve some in a tureen.
