Endive with Pears and Blue Cheese
- 13 c. sherry vinegar
- 3 tbsp. extra-virgin olive oil
- 2 tbsp. sugar
- 1/4 tsp. salt
- 1/4 tsp. Freshly ground black pepper
- 4 ripe Bartlett pears
- 3 endives
- 1/2 lb. Roquefort cheese
- 1/4 c. pecans
- In medium bowl, whisk together vinegar, oil, salt, sugar, and pepper.
- Halve and core the pears and cut each into 12 wedges; set aside.
- Divide endives among salad plates and drizzle one-fourth of the vinaigrette over endive.
- Arrange pear wedges on endive and drizzle with remaining vinaigrette.
- Sprinkle Roquefort and pecans evenly over salads and serve.
