Endive with Pears and Blue Cheese

  1. In medium bowl, whisk together vinegar, oil, salt, sugar, and pepper.
  2. Halve and core the pears and cut each into 12 wedges; set aside.
  3. Divide endives among salad plates and drizzle one-fourth of the vinaigrette over endive.
  4. Arrange pear wedges on endive and drizzle with remaining vinaigrette.
  5. Sprinkle Roquefort and pecans evenly over salads and serve.
