No Bake Hi-Protein Quickie Cookies
- 3 c. quick rolled oats
- 2 c. Baker's macaroon coconut
- 1/2 c. wheat germ
- 1 c. nuts
- 1 c. chopped dates
- 1/2 c. flour
- 1 envelope Knox gelatine or 1 Tbsp. plain gelatin
- 1/2 c. water
- 2 c. sugar
- 2 Tbsp. cocoa or 1 sq. Baker's chocolate
- 1 1/4 c. milk
- 1 stick oleo or butter
- 1 tsp. vanilla
- 1/2 tsp. maple flavor
- Mix dates with 1/2 cup flour.
- In cup, dissolve gelatine in water and set aside.
- In a large bowl, combine oats, coconut, wheat germ, nuts and dates.
- In saucepan mix sugar and cocoa.
- Add milk and heat until sugar is dissolved.
- Add oleo and bring to a boil (just until butter melts).
- Add vanilla and maple flavoring.
- Add softened gelatin.
- Stir and cook about 1 minute.
