Elderflower Cordial

  1. Put the sugar into a large mixing bowl or pan and pour the boiling water over the top.
  2. Stir to dissolve the sugar.
  3. Add the citric acid, which acts as a preservative.
  4. Also slice the lemons and add them to the pan.
  5. Gently shake the flower heads over the sink or trash to get rid of any bugs then add them to the liquidmake sure the heads go under the water.
  6. Cover with a clean tea towel or cling film and leave for 24 hours to infuse, stirring occasionally.
  7. Pour the infused mixture through a muslin lined sieve into a jug.
  8. Then carefully decant it into sterilized glass bottles and seal.
  9. The cordial will keep for 2-3 weeks in the refrigerator.
  10. If you want the cordial to keep for up to twelve months then follow general canning principals to sterilize the cordial in the bottles, processing in a hot water bath for 20 minutes.
  11. Elderflower Cordial couldnt be easier to make, it takes so little time and effort for a truly stunning result.
