Danish Almond Loaf

  1. Preheat the oven to 325 degrees.
  2. In a large bowl, beat the butter and sugar until soft and fluffy.
  3. Gradually beat in the eggs, one at a time, until a fine mixture forms, about 1-2 minutes.
  4. Add the finely ground almonds, almond extract, and cinnamon and mix thoroughly.
  5. Blend in the flour and baking powder.
  6. Sprinkle the coarsely chopped almonds into a 9x5-inch loaf pan that has been sprayed with nonstick cooking spray.
  7. Spoon the batter over the almonds and bake for 55-60 minutes or until a wooden toothpick inserted in the center comes out clean.
