Minted Apricot Fish
- 6 large white fish fillets
- 425 g apricot nectar
- 30 g French onion soup
- 1 tablespoon lemon juice
- 2 tablespoons of fresh mint, chopped
- Place fish in baking dish in single layer.
- Combine remaining ingredients and pour over fish.
- Cover and bake in moderate oven for about 45 minutes until fish is tender.
- You can uncover for last few minutes to get a caramelized finish.
