Mandarin Orange & White Wood Ear Jelly
- 2 pieces (about 1/2 cup) white wood ear (white fungus), hydrated, drained
- 4 cups cold water, divided
- 2 fresh mandarin oranges, sectioned
- 2 cups boiling water
- 1 pkg. (85 g) Jell-O Orange Jelly Powder
- 1/4 cup thawed Cool Whip Whipped Topping
- Remove any tough root pieces from wood ear; discard.
- Break wood ear into bite-size pieces.
- Bring 2 cups cold water and wood ear to boil in saucepan; cook 2 min.
- Drain; cool.
- Combine wood ear and oranges; place in 4 dessert glasses.
- Add boiling water to jelly powder in medium bowl; stir 2 min.
- until completely dissolved.
- Add remaining cold water; stir.
- Pour over wood ear mixture.
- Refrigerate 2 hours or until firm.
- Top with Cool Whip just before serving.
