Kale Soup
- 4 cups kale, chopped
- 1 medium onion, chopped
- 4 garlic cloves, crushed
- 2 (15 ounce) cans white beans, undrained
- 1 (14 1/2 ounce) can diced tomatoes
- 4 cups chicken broth
- 2 teaspoons Italian herb seasoning
- pepper
- 14 lb sausage (cooked & crumbled)
- Saute garlic & onion in 1 tbsp oil till soft.
- Add kale and saute till wilted.
- Add all other ingredients & simmer.
- Can sprinkle with chopped parsley.
