Grammie Miller's Salmon Souffle

  1. Clean salmon, and separate into flakes.
  2. Add seasonings.
  3. Heat bread crumbs, in milk, for 5 minutes.
  4. Beat egg yolks, until thick.
  5. Add salmon and egg yolks to bread crumb mixture.
  6. Beat egg whites.
  7. Cut and fold egg whites into mixture.
  8. Turn into a buttered casserole dish.
  9. Set in pan of hot water.
  10. Bake at 350, for about 1 hr., or until souffle is firm.
