Guacamole Specialty Recipe
- 2 med. ripe avocados
- 2 tbsp. lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 c. lowfat sour cream
- 1/2 c. mayo
- 1 pkg. taco seasoning mix
- 2 (10 1/2 ounce.) cans bean dip
- 1 c. minced lettuce
- 1 lg. bunch green onions with tops (1 c.)
- 3 med. sized minced tomatoes
- 2 (3 1/2 ounce.) cans minced olives
- 1 c. sharp cheddar cheese
- Lg. round tortilla chips
- Peel, pit and mash avocados in medium sized bowl with lemon juice, salt and pepper; set aside.
- Combine lowfat sour cream, mayo and taco seasoning fold in bowl.
- To assemble, spread bean dip on large shallow serving platter.
- Top with seasoned avocado mix.
- Layer with lowfat sour cream and taco mix.
- Sprinkle with minced onions, lettuce, tomatoes and olives.
- Cover with shredded cheese.
- Serve chilled or possibly at room temperature with round tortilla chips.
- Makes 20 appetizer servings.
