Don't Toss Them Out!! Almond Tofu with Loquat Seeds
- 10 Loquat seeds
- 600 ml Milk
- 100 ml Heavy cream (or milk)
- 50 grams Sugar
- 5 to 10 grams Gelatin
- Remove the outer shell of the seeds.
- Chop the end with a knife and they will come right off.
- Finely chop the seeds.
- (They aren't that hard, the texture is similar to that of garlic).
- Omitting the gelatin, put all of the ingredients in a sauce pan, then heat on medium.
- Turn off heat right before it boils, then let sit for 30 minutes (the almond flavor will be released).
- Return to medium heat.
- Turn off heat right before it boils, then add the gelatin.
- Stir, let cool, then pour into individual cups through a tea strainer (discard the seeds).
- Chill in the refrigerator, then it's ready!!
- You should be able to make about 8 cups.
- Top with fruit.
