Don't Toss Them Out!! Almond Tofu with Loquat Seeds

  1. Remove the outer shell of the seeds.
  2. Chop the end with a knife and they will come right off.
  3. Finely chop the seeds.
  4. (They aren't that hard, the texture is similar to that of garlic).
  5. Omitting the gelatin, put all of the ingredients in a sauce pan, then heat on medium.
  6. Turn off heat right before it boils, then let sit for 30 minutes (the almond flavor will be released).
  7. Return to medium heat.
  8. Turn off heat right before it boils, then add the gelatin.
  9. Stir, let cool, then pour into individual cups through a tea strainer (discard the seeds).
  10. Chill in the refrigerator, then it's ready!!
  11. You should be able to make about 8 cups.
  12. Top with fruit.
