Island Style Shrimp

  1. Cook shrimp per label directions just prior to serving.
  2. Apple Mango Salsa: Mix vegetable oil, orange juice, rice vinegar, salt & pepper together.
  3. Add diced vegetables and apples.
  4. Add a dash of cayenne pepper.
  5. Mix well.
  6. Refrigerate for 1 hour.
  7. Presentation: Cut acorn squash in half; scoop out seeds.
  8. Put in microwave for 3 minutes.
  9. Cool.
  10. Fill with apple mango salsa.
  11. Set on large serving plate.
  12. Arrange shrimp on plate.
  13. Fry matchstick potatoes; put on plate and garnish with lime and green onions.
