Zucchini & Mint Bake

  1. Preheat oven to 180C.
  2. Grease and line the base and side of a round (20cm) 7cm-deep cake pan with non stick baking paper.
  3. Put the eggs and flour in a bowl and whisk together until well combined.
  4. Add the remaining ingredients and season to taste with salt and pepper.
  5. Stir well to combine and pour into the prepared pan.
  6. Cook in the oven for approximately 45 minutes, until cooked through and golden.
  7. Cool in the pan.
