Rhubarb Custard Pie
- 2 cups finely chopped rhubarb
- 1-1/4 cup white sugar
- 1 tbsp. flour
- 1/2 cup cream
- 2 eggs
- 1/2 cup water
- 1/2 tsp. nutmeg
- 1 unbaked pie shell
- Arrange rhubarb in unbaked pie shell.
- Mix together sugar, flour, cream, eggs and water.
- Pour over rhubarb.
- Sprinkle with nutmeg.
- Bake at 400 for 10 minutes.
- Reduce heat to 325 and bake another 35-40 minutes or until set.
