Raspberry (Or Blueberry) Chicken
- 12 teaspoon dried thyme
- 12 teaspoon rubbed sage
- 14 teaspoon pepper
- 4 boneless skinless chicken breast halves
- 14 cup seedless raspberry jam
- 2 tablespoons orange juice
- 2 tablespoons cider vinegar or 2 tablespoons red wine vinegar
- For the chicken:.
- Preheat oven to 350F.
- Combine thyme, sage, and pepper.
- Rub over chicken.
- Bake covered for for 45 minutes or until juices run clear.
- For the sauce:.
- In a saucepan, combine jam, orange juice, and vinegar.
- Bring to a boil, boil for 2 minutes.
- Serve sauce with chicken.
