Light and Delicious Potato Salad

  1. Microwave the potatoes.
  2. Thinly slice the onion, rub it with salt, and soak in water.
  3. Thinly slice the cucumber.
  4. Shred the lettuce into bite-sized pieces.
  5. Put the boiled potatoes in a bowl, and remove the peel as you mash them with a fork.
  6. Add the onion, cucumber, crab sticks and lettuce.
  7. Mix in the dressing, and season with salt and pepper.
