Papaya Sorbet

• 2 medium papayas, seeded, peeled and cut into chunks
• 1 cup simple syrup (see note)
• Juice of 3 limes

1. Puree papaya until smooth.
2. There should be about 1 1/2 cups puree.
3. Add the simple syrup and lime juice.
4. Freeze in an ice cream machine according to the manufacturer's directions.
