Indian Seafood Stir-Fry

  1. In a wok or a large, deep skillet, heat oil over medium heat.
  2. Add onion, cumin, coriander, dry mustard, salt, and turmeric.
  3. Stir-fry until onion softens, about 3 minutes.
  4. Add chiles and ginger; cook, stirring, 1 minute.
  5. Increase heat to high and add tomatoes, coconut, and seafood.
  6. Stir-fry 3 to 5 minutes, until shrimp are cooked through.
  7. Discard any mussels that don't open once cooked.
  8. Sprinkle with lemon juice and chopped cilantro.
  9. Stir to combine and garnish with cilantro leaves.
