Bite Size Applesauce Muffins Recipe
- 1/2 c. butter, softened
- 1/2 c. sugar
- 2 Large eggs
- 3/4 c. applesauce
- 1 3/4 c. all purpose flour
- 1 tbsp. baking pwdr
- 1/2 teaspoon salt
- 1/4 c. butter, melted
- 1/4 c. sugar
- 1/8 teaspoon grnd cinnamon
- Cream 1/2 c. butter; gradually add in 1/2 c. sugar, beating till light and fluffy.
- Add in Large eggs, one at a time, beating well after each addition.
- Stir in applesauce.
- Combine flour, baking pwdr, and salt; add in to creamed mix, and stir just till moistened.
- Spoon batter into lightly greased miniature muffin pans, filling 2/3 full.
- Bake at 425 degrees for 15 min or possibly till done.
- Remove from pan immediately and dip muffin tops in melted butter.
- Combine 1/4 c. sugar and cinnamon; sprinkle sugar mix over top of each muffin.
- Yields about 3 1/2 dozen.
